Patrik Pokrývka grew up with determination and discipline, originally pursuing hockey and dreaming of the NHL. He later traded his hockey jersey for a chef's jersey and embarked on a journey that led him to the front counters of the high-end restaurant industry.

He boldly entered the world of Nordic restaurants, working in sought-after establishments such as Noma and Maemo, where he picked up technique, access to ingredients and a philosophy of gastronomy. Today, he runs the kitchen of Restaurant Sissi in Hotel Lomnica, where he combines local Tatra ingredients, modern techniques and serving aesthetics to make every plate an experience.

Cooking philosophy and style

Patrik believes that "a chef is only as good as his team". Clean flavours, seasonality, precision technique and visually striking plating play a major role in his kitchen. On the question of ingredients, he says: "When bear garlic grows in the west, we still have snow in the Tatras" and he adapts his cuisine accordingly.

Under Patrik's leadership, Restaurant Sissi has become a place where traditional mountain ingredients meet innovative processing. For example, collaborations with Farná Farm, wines from the VIAJUR production portfolio or beers from Pálffy Brauerei are proof of his approach.
